Instant favorite! This vigorous heirloom amaranth is named after its place of origin in Mexico. Bronze/plum foliage is eaten as a cooked green when young. Plants grow quickly to 6 feet, with upright flower spikes that hold their deep magenta color all season. Multi-branching, with many flowering side shoots. Tiny tan seeds are highly nutritious.
Opopeo, Copperhead, and Rio San Lorenzo are the varieties we recommend if you want to harvest amaranth seed to eat. Also Rodale Red Leaf Grain, especially where there are space limitations. Seeds are tiny, but are produced in quantities that add up. Of course all these varieties are also wonderful ornamentals, bringing high drama to the garden all summer.
