When Italians declare a polenta corn to be #1 in flavor, it’s time for the rest of us to pay attention. This native New England original was introduced to Italy in the 1800s and was further developed in the Garfagnana area into the premier polenta corn now known as Otto File. Its nutritional value is as exceptional as its taste – high in protein, low in starch, and high in carotenids that bestow its brilliant golden-orange color. Vigorous plants grow to 6½’, with 1 or 2 8-12” cobs each. Otto File translates as “eight row”, though some ears have up to 12 rows of kernels.
