cress has leaves so ruffled,
folded and blistered you may
wonder whether the plant is
healthy. But put those leaves
in a salad and they add not
only the classic peppery taste
of cress, but a loft that
improves salad texture. Plus,
dried seed stalks with their
delicate papery husks make
an effective bouquet filler.
